Hot bites


The temperature outside is dropping, so we'd like to eat something hot. Not talking about temperature though, but about spices. Now's the time to go to the market and find all the hot peppers that are in season, while we show you three recipes with them as main characters.

For this one, you'd need half a kilo of red hot peppers. Put them in the oven so they get that smokey flavour, and after they chill down, put them in your blender together with some sugar, salt and a cup of vinegar. After that, reduce the sause over medium heat if you need that.

We love it over pasta, pizza, and omelettes - just put three tablespoones of dry chilli in a pan, together with a little bit of neutral oil. After two minutes (careful not to brown your chilli), add the rest of the oil for a few more moments, and then you're all done.

What you need to do first is put half a kilo of green hot peppers on the stove, and after that chop them with your blender - together with some garlic, handful of parsley and dill. Add 100mg of sugar, 200ml of vinegar, 150ml of oil and let them sit like that for 24 hours. After that, put them in jars and seal them in hot water for a few moments. Add the mixture to all kinds of grilled meat - or simply over toast.
