The New Rakia Road

For sure you know at least one lord of the kettle, who is like "come to try my rakia - it's the best!". If you ask Svetlin Mirchev, this coin has two sides: yes, it is good to pass on the craft, but the rakia is a far more complex drink to stay next to the shopska salad. With this idea, he returned from Vienna (where he studied at the Austrian Wine Academy) and over a year he traveled around the Balkans to meet small producers in search of their best distillates. Today his visits fill the shelves of (which he holds with his wife Gergana), but before we try some of their bottles at the Balkan Rakia Festival, we sit on a table and talk - what is "real rakia" and what to put next to it rather than just cut a tomato.
