Why chase a whole lamb, when there is an easier way to get it in your plate. How? We asked The Secret Dinner and got the perfect St George's day recipe:

In Bulgaria St. George's Day is the time to eat lamb, to feast on lettuce salad, to go to a military parade and to be happy about the first truly warm days. If you want to cook lamb, but with an element of improvisation, we guarantee that these lamb meatballs with feta cheese will not take more than an hour in the kitchen.

You need half a kilo of minced lamb - mix it with a cup of feta, a small onion, a clove of crushed garlic, 3 tablespoons of bread crumbs, one beaten egg and spices - finely chopped parsley, cumin, cinnamon, pepper and salt. Knead well and store in the fridge for half an hour. Then shape balls the size of a walnut, put them them in bread crumbs and bake in a preheated oven at 200 degrees for half an hour. They are ready when the outside is crispy and the inside remains juicy. Serve with chilled wine and in the company of lettuce and thick yogurt with fresh garlic and dill. They are so delicious that brass music comes by itself to play for you.
